Guest Post: Cream of Broccolini Soup with Pecan, Cherry, & Feta Crumble

Hey Everybody!
To tell you all the truth, I’ve been on a soup kick. Whatever is in my fridge has been transformed into any kind of soup I can think of. I’m actually not usually much of a soup person, but I’ve really been converting myself over to the other side. It’s nice.
It’s funny, I originally started this blog with the intention to post on health, nutrition, and all the conspiracies and controversies in between. And while I do plan to do so in the future, I can’t exactly muster up the extra time to research and post about these subjects as I’m busy writing one too many research papers for my nutrition classes at school. But that’s okay, because in result, you guys get more easy and healthy recipes which comply with nutritional science :) So while you may not know the ins and outs of why my recipes are so good for you, you can rest assured that simply, they are.

That being said, I’ve recently had the great pleasure of writing my very FIRST guest post for the blog Soundness of Body and Mind, where I feature this very recipe. Soundness of Body and Mind is an awesome blog run by a very awesome lady whom I can really identify with in terms of our journeys to health.

Without further ado, I present to you my:

Cream of Broccolini Soup with Pecan, Cherry, Feta Crumble (Paleo/Primal/Vegetarian)

Ingredients:

-2-3 medium red onions, chopped

-1 cup of broccolini stems, chopped

-1 cup of broccolini florets, chopped

-1 cup of carrots, chopped

-1 oz of butter

-1 tsp olive oil (my favourite here)

-1 oz of tapioca flour (my favourite here)

-2.5 cups of broth, preferably chicken (warm water will work too)

-3 egg yolks

-2 oz raw goat cheese feta, crumbled

-1/4 cup pecans, chopped (my favourite here)

-1/4 cup dried unsweetened cherries, chopped, (my favourite here)

-1/2 tsp coarse black pepper and another 1/4 for later, (my favourite here)

-1 tsp turmeric, (my favourite here)

-1/2 tsp allspice or ground cloves and another 1/4 for later, (my favourite here)

-2 tsp garlic powder, (my favourite here)

-Himalayan sea salt to taste, (my favourite here)

Equipment needed: high powered blender and oven
