In an effort to show my fellow students that you can eat well, despite having a crazy schedule, I am posting a day of my typical eats. They are definitely simple, but they get the job done!
I made my usual cup of ganoderma coffee to warm up my insides and wake me up! Instead of using canned coconut milk, I added some homemade coconut milk that I had made a few days before. Flavor-wise, it’s WAY better than canned.
Since I’m at school during lunch time, I always pack something that’s simple, not fussy, and delicious.
For lunch, I will stuff as much organic baby kale as I can into a glass container; then, I will dump about 4 huge spoonfuls of organic tomato pasta sauce (I buy the brand Classico from Costco, it comes in glass containers, score!); after that, I will add around 10 or so kalamata olives and lastly, I will add as much peppered smoke salmon as my heart desires (I made sure to break it up).
When it comes time to eating my concoction, I throw my glass container full of food into the microwave for about a minute or so. The resultant product is delicious; all you have to do is mix up the contents and enjoy. It’s yummy.
For a drink to accompany my lunch, I mixed approximately 4 oz. of organic carrot juice with 4 oz. of unflavored sparkling water. It’s an unusual yet incredibly refreshing mixture that I really enjoy. You could totally substitute other juices. I would recommend pomegranate juice.
And as a pseudo-dessert, I enjoyed a fair share of these bad guys: freeze dried blueberries. They were a good find!
After school snack:
I almost ALWAYS have to nibble on something when I get home. I usually take the route of a rice cake, topped with a nut butter of choice, and some kind of sweetener (this can be fruit, honey, chocolate, etc). And sea salt. ALWAYS sea salt. I have a very, very weak spot for sweet and salty combinations.
For this day of eats, I had a rice cake smothered with salted crunchy peanut butter topped with unbelievably ripe manilla mango chunks and a sprinkle of himalayan sea salt.
I love dinner. You know why? It’s because I usually don’t make it.
On this day, I had a salad made of whatever was in my refrigerator (that’s usually how my salads go) and as a dressing I added some pickled red cabbage that my mom had made a while back. It’s incredibly flavorful so it lends itself as a wonderful dressing. Aside my salad, I had a piece of perfectly barbecued chicken. If you’re a student, or always on-the-go, you could easily roast up some chicken in the oven with some of your favorite seasonings and do some school work while you wait for it to cook.
I’m just going to pretend that you didn’t scroll all the way down to this portion of my blog post because that’s something I would do and you’re above and beyond that right? I’ll just pretend you are.
Lately, I’ve been on a mango kick. They are, by all means, my favorite fruit. I adore them. For dessert, I chopped up yet another unbelievably ripe manilla mango into a bowl and topped it with some homemade coconut cream and coffee-infused chocolate shavings. The coconut cream is NOT coconut butter- those two are often confused with each other. This cream is similar to the solid cream in the first picture in this post but it is much smoother and whipped cream-like.
As you can see, my meals are not fancy nor are they difficult to prepare. My main reason for posting this is because everyday, without fail, I see students eating the worst junk possible, every single day. While occasional indulgence is encouraged, habitual indulgence can be a cause for worry.
With that being said, plan ahead and pack your meals the night before so you can reap endless benefits such as better health, more cash saved, less stress, less time spent in line, more energy, etc.
Never view your health as an indulgence; when it comes down to it, it is the only thing you have.
